Healthy Cooking.. :) To make up for the baking...

Eating healthy is an addiction of mine with the exception of the occasional trip to Carney's for the Red Barron Polish Dog, but can you blame me? I never regret it either! If you are a Southern California resident I recommend this place. Here's a Vegetable Salad dish I grabbed from Cooking Light.

Pull out of your frig a handful of asparagas, 1 red bell pepper, 1 zuchinni, 1 yellow squash, 1 sweet onion, and a handful of mushroom caps. Wash really good, spray with some olive oil cooking spray and toss on the grill. Let them get grill marks and become soft to the bite or whatever consistency you like to eat your vegetables.Chop to 1 inch pieces and toss together in a bowl 2 TB sherry vin., 1 TB EVO, 1/2 tsp Kosher salt, 1 1/2 tsp honey, 1/2 tsp dijon mustard and some cracked black pepper. Add bits of parsley, basil and chives in with the vegetables and sprinkle some Queso Fresco ontop.

Makes a great side with your favorite steak recipe!

Almond Mango Kulfi

I've been wanting to learn how to make Mango Kulfi, and found multiple recipes. I decided to go with the most complicated one (the one with more ingredients) of the bunch and it turned out so tasty. It is amazingly very easy to make. I can't find the location I adapted this recipe from. Well, sorry I won't post the recipe without acknowledging the person I got it from. If I can find it's location I will post it. :)

Apron Or Not....That is the question.

Anyone can cook or bake, but if it's not a passion than the ideas to go further into exploring flavors and creations will reach a limitation point. I don't think it is hard to cook or bake but you definitely need a passion in order for it to be diverse and limitless. I personally love to bake more than cook because I can be more creative with baking. Cooking takes more patience, more guidelines to staying healthy and research about what's good and what's not for your body. It takes an understanding of flavors and knowing what works with your taste buds. You know what you like and just because you pick up a cook book everyone is raving about doesn't mean it will fit what you like. Baking is pretty simple, if you love the taste of something sweet you will love to bake anything. Cooking food on the other hand has everything to do with what spices and condiments you like in your food. Anyhow, the cookie pictured above is Dulce De Leche with Dulce De Leche caramelized filling, this is an old picture, I haven't made these in a long time.

Coconut Mango Tartlette

I made a coconut tartlett with mascarpone cream and mango topping. Damn good.... The recipe was adapted from Addicted Sweet Tooth, my goodness was I glad to stumble on this tasty treat.
